How long can one expect to get out of these carbon/alum bolts and screws in the derailleurs and other 'low stress' areas? I don't see why they wouldn't last as long as the stock ones if they are placed and not fiddled with.

As I said, I have no clue about fatigue life and I don't think it matters until you really stretch a bolt's limits.
I don't see how a bolt hodling your cable guide in place would wear out. Then again, a dab of tu glue would do as well.
